Traditionally, all Saffron in the world was produced in the Northern Hemisphere. It all started with heavy trade and production during the Minoan civilization, around 2000 BCE, some 4000 years ago. From that time, Saffron cultivation has been documented, on clay tablets and on frescos, wall painting in the palaces of Knossos on the island of Crete, and in Akrotiri on the island Thera (nowadays better known as Santorini).
